
What do you do if a friend brings you a loaf of cinnamon chip bread from the Great Harvest Bakery? You make french toast of course! What would a cinnamon addict do to up the cinnamon factor of this french toast? Make Cinnamon Syrup of course! I saw this syrup on The Sisters Cafe blog and thought it sounded delicious! I changed the recipe up a little bit by using maple syrup instead of corn syrup and using 1/2 and 1/2 instead of canned milk. Oh, and I also doubled the amount of 1/2 and 1/2 because I wanted it to have a caramel creaminess! This is soooo good! It would be delicious on ice cream, bread pudding, PF Chang's banana spring rolls, apple cobbler ala' mode, shoe leather....you get the idea! Be sure to have a tall glass of milk handy if you are eating this on french toast, it is very sweet! I hope you don't wait too long to try this, you're going to love it! You're welcome!
Ingredients
1 cup sugar
1/2-3/4 tsp. cinnamon
1/2 cup maple syrup
1 cup 1/2 and 1/2, cream or evaporated milk
Combine all ingredients in a large pan. (I started with a pan that was too small, it boiled over, I had a mess, I swore, poured the boiling hot lava into a large glass bowl and finished it in the microwave, but you do whatever works for you!) Stir the ingredients until the sugar melts and it comes to a full boil. Let it boil for 5-8 minutes so it thickens and gets nice and syrupy. Pour over anything you have on hand and enjoy!
P.S. In case you don't have a recipe for french toast here is a simple one to start with. Basically you combine eggs and milk and then dip bread in to soak up the goodness, cook in a pan and eat!
Start with 2 eggs and 1 cup milk. Stir in a dash of vanilla and cinnamon if you want to. Use a whisk to whip it up until it's a little frothy and you know all of the eggs are combined with the milk. Dip bread slices, (use any bread you have on hand, this is a good way to use up bread that is a little dry and no longer good for sandwiches etc.) into the milk mixture on both sides, allowing the bread to soak up as much liquid as you like. (Some people like to really soak it and other's dip, turn and remove almost immediately so that it is barely coated with the milk mixture. It is a matter of personal preference so experiment and you decide how you like it!) Spray or butter a griddle and fry the slices on both sides until they are nicely browned and the bread is no longer "soggy". This makes 4-6 slices depending on how you coat the bread so if you need more, just increase the ingredients accordingly. (Only have 2 eggs and need to feed more than 4 people? Just dump in extra milk and stretch it, no one will know the difference, especially if you cover it with cinnamon syrup!)
