Worth a Fortune Cookie

This cookie is included in the top 5 because it involves oatmeal. YUM! In this particular recipe, the oatmeal is blended into a fine powder so you get the distinct taste of oatmeal, but the texture isn't present. Interesting? Yes. Disappointing? No. I can't imagine anyone turning down this cookie. I know I couldn't.

Ingredients:
1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 1/2 cups blended oatmeal
12 ounces semi-sweet chocolate chips
1-4 ounce Hershey chocolate bar
1 1/2 cups chopped nuts (optional)

Directions:
Cream the butter and both sugars. Add eggs and vanilla, mixing after the addition of each. Combine flour, soda, powder, and salt in a separate bowl. Measure oatmeal into a blender and blend into a fine powder. Combine with the flour mixture. Mix the wet and dry ingredients together until just combined. Chop Hershey bar and add it, along with the chocolate chips and nuts. Roll into balls and place two inches apart on a prepared cookie sheet. Bake for 10 minutes at 375 degrees.
