What do you do when you have a gift box of apples and they are not the crisp delicious apples you thought they would be? You grate them up and bake them into apple pudding of course! I am not quite sure why this is called a pudding because it more closely resembles a very moist cake, but who am I to question the wisdom of someone who put some very simple ingredients together to create something so delicious?! I am not sure where this recipe originated, probably with one of our pioneer ancestors who crossed the plains, it is that old, but it is a good one and should have a place of honor on this blog! Oh, I forgot to mention that this cake is smothered in a creamy and delicious Caramel Sauce which you will want to make by the gallon so that you can pour it over everything! ("Everything" would include ice cream or whipped cream of course!) While this will not be the most beautiful dessert you have ever served, it is quite homely actually, it is simple and delicious. Enjoy!
Ingredients
1/2 cup butter
2 cups sugar
2 eggs
4 cups grated apples (not peeled) (about 4 large apples)
1/2 cups chopped nuts, optional (I use 1 cup)
2 tsp. soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
dash of cloves
2 cups flour
Cream the butter, sugar and eggs. Stir in apples. Add rest of ingredients and stir just until combined. Pour into sprayed 9x13" pan. Bake at 350 degrees for 45 minutes. Serve with caramel sauce and ice cream or whipped cream.
Caramel Sauce
In a large saucepan add:
2 cups brown sugar
1 cube butter
Cook over medium heat until butter is melted and brown sugar has dissolved. Add:
1 cup cream (or evaporated milk)
Bring mixture to a rolling boil and cook for 3-4 more minutes. Remove from heat add:
1 tsp. vanilla
Allow to cool slightly and serve over apple dessert. Refrigerate leftover sauce. (or just eat with a spoon--you choose)
