Easy Crescent Rolls


This recipe was given to me by Doreen Snyder of Mapleton years ago and has been brought to many a Thanksgiving dinner. The beauty of these rolls is that you make the dough the night before and then refrigerate it. The next morning you roll the dough out and put them on the pans to rise for 4 hours and then bake. This allows you plenty of time to clean up your kitchen and get the rest of your meal prepared and still have fresh hot rolls with your meal. It is also awesome when you are unlucky enough to have the 1:00 pm church schedule. You can roll out your dough before church, let them rise while you are gone and then bake them when you return. Almost makes the late schedule worth it! Almost....

Combine:  1 Tbsp. yeast
                  1/4 tsp. sugar
                  1/4 cup very warm water
Set aside to allow yeast to start working.

Microwave 1 Cup milk on high for 2 minutes
Add: 1 cube of butter cut into eight pieces

In Kitchen Aid bowl beat:
3 eggs
1/2 cup sugar
1 tsp. salt
Add milk/butter mixture and stir well.
Add 2 cups flour and  beat until smooth. Switch to dough hooks and add 2 more cups of flour.
Knead with dough hooks until nice and smooth again. It will resemble a very thick batter, a very sticky bread dough. Do not add additional flour, it will be perfect after refrigerating. Spray a large bowl with a lid and place the dough in the bowl. (This dough will almost triple in size overnight so make sure your bowl is big enough or you will be cleaning your refrigerator in the morning instead of making rolls!) Cover and place in fridge at least 4 hours or overnight.

About 4 hours before you want to bake the rolls, remove the dough from the fridge and plop it onto your clean and sprayed counter. Roll the dough into a large circle, about 1/2" thick and brush with melted butter and cut with a pizza cutter or sharp knife into fourths and repeat until you have 16 wedges. Starting at the wide edge roll up, and place on a well greased baking sheet, with the tip tucked underneath. Cover with a clean dish towel and allow to rise for 4 hours. Bake at 350 degrees for approximately 10 minutes, until light golden brown.
