This recipe is from Gayle Gammell and they are delicious, as all fried things tend to be. If you want to use your Kitchen Aid mixer you will want to half this recipe, because it makes A LOT. It will keep in the refrigerator for a few days and you can always shape them like rolls and bake them, but then they wouldn't be scones would they? Keep in mind that the dough is refrigerated overnight before you use it, so plan ahead.
Of course you will want to serve these with honey butter so while you are waiting for these to raise, be sure to whip some up! Get the oil heated it's time to fry!
Ingredients
1/2 cup warm water
2 Tbsp. yeast
2 Tbsp. sugar
1 quart buttermilk, warmed in microwave for 2 minutes
2 eggs, beaten
6 Tbsp. oil
1 1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. soda
9-11 cups flour
Dissolve the yeast in 1/2 cup warm water and sprinkle the sugar over the top. Combine the wet ingredients in a large bowl and add the yeast mixture. Add the rest of the ingredients and knead until you have a nice soft but not sticky dough.
Refrigerate overnight. When ready to use, roll out to 1/2" thickness and cut into squares with pizza cutter. Fry in hot oil. Drain on paper towels. Sprinkle with powdered sugar, dip into cinnamon sugar, or slather with honey butter.
